Chicken Schnitzel

Chicken Schnitzel coated with Almond Meal served with Sauteed Creme Fraiche Dutch Carrots.

Ingredients

  • Free range chicken thigh fillets
  • Buckwheat flour
  • Egg
  • Almond Meal Mix (almond meal, chopped parsley, grated fresh parmesan, pink salt and pepper)
  • Olive oil
  • Carrots
  • Creme Fraiche
  • Salt & Pepper

Directions

To make the Schnitzel:

  • Tenderise free range chicken thigh fillets
  • Coat chicken with buckwheat flour
  • Then coat with egg wash
  • Cover thigh fillets with Almond Meal mix (almond meal, chopped parsley, grated fresh parmesan, pink salt and pepper)
  • Pan fry with olive oil until golden brown

Dutch Carrots:

  • Sautee carrots in organic butter
  • Add 2 dollops of creme fraiche and season with pink salt and pepper
