Chicken Schnitzel coated with Almond Meal served with Sauteed Creme Fraiche Dutch Carrots.
Ingredients
- Free range chicken thigh fillets
- Buckwheat flour
- Egg
- Almond Meal Mix (almond meal, chopped parsley, grated fresh parmesan, pink salt and pepper)
- Olive oil
- Carrots
- Creme Fraiche
- Salt & Pepper
Directions
To make the Schnitzel:
- Tenderise free range chicken thigh fillets
- Coat chicken with buckwheat flour
- Then coat with egg wash
- Cover thigh fillets with Almond Meal mix (almond meal, chopped parsley, grated fresh parmesan, pink salt and pepper)
- Pan fry with olive oil until golden brown
Dutch Carrots:
- Sautee carrots in organic butter
- Add 2 dollops of creme fraiche and season with pink salt and pepper
