Chocolate Coconut Flaxmeal Balls

Ingredients

  • 15 Medjool Dates Pitted
  • 1 1/4 cup Cacao Powder
  • 1 1/4 cup Desiccated Coconut
  • 1/2 teaspoon Cinnamon Powder
  • 1/2 teaspoon Pure Vanilla Extract
  • 1/3 cup Coconut Oil/Butter
  • 1/3 cup Coconut Paste

Directions

First of all …You will need a food processor.

  1. In the bowl of the food processor, add 3/4 cup Flaxmeal (Almond Meal and Flaxeed combined) OR LSA
  2. Then 15 Medjool Dates Pitted
  3. Then 1 1/4 cup Cacao Powder
  4. Then 1 1/4 cup Desiccated Coconut
  5. Then 1/2 teaspoon Cinnamon Powder
  6. Then 1/2 teaspoon Pure Vanilla Extract
  7. Then 1/3 cup Coconut Oil/Butter – be generous
  8. Then 1/3 cup Coconut Paste
  9. Process until ingredients combined well
  10. Plain Chocolate Balls – just roll it into balls and in a bowl of desiccated coconut coat the balls well
  11. Macadamia Chocolate Balls – flatten chocolate mix and add 1 Macadamia in the center then gently roll into a ball, coat with coconut
  12. Chocolate Jam Balls – create a pod with chocolate mix, add a small amount of Homemade Strawberry Chia Jam (in previous post) then gently mould into a ball and coat with coconut
