Seans Famous Kangaroo Con Carne

I confess I am hardly a master chef, but that’s no excuse not to eat healthy, protein packed, delicious food. Here’s one of my favourite Healthy Recipes to try for yourself!

Serves 4-6


  • Chilli con carne spice mix
  • 1 kg kangaroo mince
  • 1 brown onion (diced)
  • 1 can 4 bean mix
  • 1 can diced tomatoes
  • Family size microwavable brown rice


  • Avocado
  • Kraft ‘lite’ cheese
  • Weight watchers light sour cream


Bring a large pan to a medium heat and start to brown the mince. Stir through spice mix while continuing to brown the meat. Once meat is browned, add the beans and tomatoes bringing down the heat slightly. Continue to stir and let simmer for another 2-3 minutes. Prepare avocado, cheese and sour cream (optional) and microwave the brown rice.
Serve and enjoy.

RememberIf you’re looking for a low carb option you can forgo the brown rice and replace with lettuce leaves or steamed vegetables.
